The GRIFFIN story begins with the scarcity of quality, authentic bread in our city. Fuelled by a desire to introduce our city to the beautiful romance between simple ingredients and age old techniques of baking, Mujahid Hussain decided to start off with GRIFFIN. He wanted to bake authentic bread. At first, people saw it as a foolhardy dream – and fair enough, considering he is not a baker!

But driven by passion, unyielding determination and a yearning to retrace classic artisan bread, he embarked on his pursuit:

to bake great bread.

Here at GRIFFIN - The Artisan Bread Store we transform simple ingredients into breathtaking breads, cakes and pastries. A unique aspect of our products is that we avoid using any retail yeast and use a self developed culture of wild yeast taken from Alfonso mangoes developed by our consultant chef, Maurice Chaplais.

We are dedicated to producing top quality products that are on par with the finest European bakeries

Employing traditional methods and authentic recipes we deliver an absolute feast for the eyes, the most exquisite breads, cakes and pastries the city has to offer!  All our delicious hand-made breads, cakes and pastries can be enjoyed at the store as well as take-away.

We do use commercial ovens to create our wonderful breads and baked goods. Our stone hearth deck ovens were imported from France and are lined with hearth stones that allow them to retain a high amount of heat, which helps our breads rise and set with a delicious crust. The ovens are equipped with steam injectors to give our breads a nice sheen and added moisture. We also use a specially-crafted spiral mixer for gentle mixing that produces less oxidation and adds more flavour.

Our products are witness to the time and effort taken to make them.

Come by and see what our bakers are up to! Please stop by the retail bakery counter in the GRIFFIN Coffeehouse. We have an assortment of our fresh breads available for purchase. Or you can pick up a morning bagel, scone, pastry or croissant or an afternoon cookie, brownie, lemon bar or muffin.

For special orders, we request the following time-frames:

24 hours for most decorated cakes (48 hours for all custom designs)

24 hours for most bread/rolls and pastry items (please inquire when ordering)

Orders must be placed by 12 noon (Monday – Friday)
